Translated by Shirley Kay A unique look into the Moroccon Jewish heritage.Moroccan Jewish cookery makes use exclusively of oil, not butter, since we do not mix butter and meat, following our rule of keeping milk products and meat separate. When we cook with milk products we do not use meat, and we do not use the same cooking utensils for the two kinds of cookery. It is thus "kosher" cookery which we are offering in this book. For all our cooking we use only pure saffron, in strands, which is dried then powdered and dissolved in water. It is this that we refer to in our recipes. And, unless mentioned otherwise, we only use peanut oil. Along with our traditional recipes, we have thought it good to add some more up-to-date ones, since our cookery has never ceased to evolve. Why I have written this book For some time the thought of writing a book about Moroccan Jewish Cookery and its traditions has attracted me. I longed to record our patrimony, so that it should not be lost to memory. I had thought at first of doing this for my family, to keep alive our own family recipes; then I thought of the many other Moroccan Jewish women throughout the world, anxious to maintain their traditions, who would be happy to rediscover the recipes of the land where they were born. I have learnt most of these recipes from my mother-in-law, who is from Essaouira, and I have also added a few from the north of Morocco. But essentially it is a book of Essaouiran cookery which I am offering here. However, the preparation of traditional dishes is the same all over Morocco, and here I have in mind our "skhina", our traditional soups, our pastels, some of our cakes, etc. I thought that a book such as this might be useful to all of us, and especially to those "mixed" couples, who are becoming ever more numerous. Before concluding I should like to pay a particularly sincere tribute to my mother-in-law, Madame Nina Levy Moryoussef, who has managed so well to keep our traditions alive for her children and many grandchildren, and who has so often spoiled us at festival times. I hope that this book may be more than just a simple cookery book, that it will revive for each of us memories of our childhood. My labour will not have been in vain if this modest work helps to preserve our patrimony, our roots which go deep in this country, Morocco, so dear to those of us who live here and also, I am sure, to those who have left their homes here. I should like this book to be a tribute and a contribution to its culture, of which our cookery is an integral part.
