Xavier Allard was cook as well as head boatman; and Monsieur and Madame Weston never relished meals in their lives better than those he served them on the small deal table covered with marbled black and white enamel cloth. In the democracy of camp life, Xavier ate with his employers, rising from time to time to replenish their plates from the simmering frying pans on the back of the stove, or their cups from the big and fragrant coffee pot. Nobody could fry or boil trout to such exact perfection as Xavier. He could make biscuit and fry ham and potatoes with the best. Xavier was proud of his skill as a cook. When Madame Weston essayed to help him prepare a meal, he endured her assistance with a polite patience which seemed to suggest that he would be greatly obliged if she would keep away from the stove. "I declare, Xavier, you certainly do brew a good cup of coffee," said Monsieur Weston. Alertly Xavier noticed the approaching emptiness of the big white cup and rose to fetch the coffee pot. For himself he had warmed over what was left of yesterday's soup. All winter long Xavier bragged to his friends of the good cheer he enjoyed with Monsieur and Madame Weston. The canned soups, the canned vegetables, the canned meats, represented to him an assured affluence. Even their gay labels he admired and respected; and he delighted in the contents of the cans, wondering how Monsieur and Madame Weston could really prefer the fresh fish, the little young lettuce from the Francoeur garden, and the wild strawberries which the children brought daily to the door, to the potted chicken and thos...
