Excerpt from A New Wine-Cooling Machine
In planning for the series of wine-making experiments which will be detailed in Bulletin No. 177, it was necessary to devise a cooling machine, both for the reduction of temperature of the heated must and for the control of the temperature of fermentation. While the machine made was intended only for a temporary and special purpose, it proved so efficient, and is at the same time so simple in construction and of such moderate cost, that it will be found useful in nearly all wineries where any attempt is made to keep the temperature lof the fermenting wine within the most favorable limits. For this reason the construction and work of the cooler are described here, together with some of the pre liminary tests made with small models before the full-sized machine was constructed.

Paperback. Zustand: New. Print on Demand. This book describes the construction and use of the author's patented, wine-cooling machine. Its efficiency was tested against other cooling devices of the time, notably against those using iron rather than copper, which the author believed would be equally effective but more economical to produce. The author believed that controlling the temperature of wine during fermentation significantly improved the end product. To support this, the book includes fermentation data from several trial runs where temperature was carefully managed, along with a formula for calculating the amount of cooling needed based on the sugar content of the grapes. The book concludes by providing detailed instructions for how to make and use this innovative device, with supporting cost breakdowns and diagrams. Overall, this book is a valuable resource for winemakers who are interested in learning how to produce better quality wine and for those interested in the history of winemaking equipment and practices.
