Flurin 1 was interested 1n determining the relative digestibility of butter and beef tallow, which he regarded as typical animal fats. The average coefficients of digestibility were found to be per cent and 92. 8 per cent, respectively.

Levites2 studied the relative digestibility of beef fat, lard, and but ter, and found that butter and beef fat were both 96 per cent digested.
