Reseña del editor:
The Portside Cuisine Cookbook will transport you to a world of gastronomical delights! The Portside Cuisine Cookbook is a collection of gorgeously photographed recipes and interesting short stories of Peg Donahue, the Yacht Chef’s life at sea, both as a live-aboard in St. Thomas, U.S.V.I, and as a chef aboard both private and charter yachts throughout the Caribbean, the coast of Venezuela, and the Eastern seaboard of the United States. She has traveled from the west coast of Florida, up and down the Intra-coastal Waterway from Miami to New York City and Long Island, continuing up the East Coast from Boston and Cape Cod, and continuing her travels as far north as the boarder of Nova Scotia, Canada. The Portside Cuisine Cookbook includes many recipes from other chefs and cooks whom she had the fortune to meet, to have shared recipes, and had wonderful dinners and experiences with along the way. Peg loves to cook and create enticing and beautiful food. She gets her greatest fulfillment from sharing her food with her family and many friends everywhere. Anyone willing to explore and enjoy good food is always welcome at her table. Peg derives great pleasure from everyone leaving her table totally happy and satiated. She has always strived to keep her food beautiful and appetizing, and never pretentious. The recipes in The Portside Cuisine Cookbook are chock full of great taste and are approachable for all the budding cooks and chefs out there ready to break out of the normal, everyday recipes. The recipes range from simple and family tested over the years to the more elaborate recipes that are great for holiday dinners, dinner parties, buffets, picnics, and every kind of conceivable party. A lot of her family recipes have a slant towards Italian – that’s her heritage. It’s the kind of food that has always been her “go-to” flavor profiles. There are many recipes; however that hail from other cultures and all parts of our globe. You’ll find Italian, French, Asian, Spanish, Greek, Mexican, German, Caribbean, and even a North African recipe. You’ll also find recipes from all the different regions and cultures of the U.S., like New England Clam Chowder, Whoopie Pies, and Lobster Newburg in a Shell; to Southern Carolina Jumbo Lump Crab Cakes, and Low Country Shrimp Burgers. There’s a little something for everyone. There are also many recipes that can be considered vegetarian; like Cherry and Ginger Soup, the beautiful and delicious Heirloom Tomato and Mozzarella Tart, Wild Rice and Cranberry Salad, or the Veggie and Red Lentil Burger. Plus, there are many more recipes that could easily be adapted to vegetarian. You will also find recipes that contain the current trends of legumes, lentils, quinoa and polenta; along with the reliable salsas, sauces, relishes, pestos, curds, marmalades and soufflés. You’ll find some of the categories basic; like Appetizers and Starters, Breakfasts, Pasta, and Poultry to the trendier topics like Panini, and Small Plates, Lunches and Burgers. All of the recipes are equally tasty and easy to follow and have step-by-step directions. The ingredients and instructions are broken down with the same category headings and are easy to reference. There is also a quick reference list of equipment needed for you within each recipe. Don’t you find it’s always less stressful to have everything, both ingredients and cooking tools, at your fingertips before you start? The Portside Cuisine Cookbook has even listed the nutritional information in each recipe for the purposes of monitoring sugar intake, sodium intake, and basic calories. You will also find an easy-to-use Index and, for the international readers, a comprehensive conversion chart.
