Balti cooking originated in the Himalayan regions of Baltistan. Hundreds of years ago nomads from Tibet, carrying their possessions on their backs, brought the traditions of Balti cooking to Northern India. Simple, spicy dishes are stir-fried in a single two-handled cast iron pan, similar to a wok. A Balti dish is a meal in itself and is served with a large naan which is used to scoop up the food from the pan.

Mridula Baljekar has adapted the recipes of Balti cuisine to suit vegetarians. Her original and inspiring recipes use the traditional Balti flavourings such as Kasoori methi (dried fenugreek) and Mughal garam masala, made up of winter spices such as cinnamon, cardamom, cloves and nutmeg. These are stir fried with a wide range of vegetables and lentils, beans and peas and paneer- an Indian cheese which can easily be made at home.

Mridula Baljekar is Indian Food Consultant to Tesco and is lecturer on Indian food at the Tante Marie School of Cookery. She is the best-selling author of 'The Complete Indian Cookbook'.
