Merle Ellis has been called "America's Best Known Butcher" by the Wall Street Journal. Besides being a whiz with a knife and cutting board, he is also an experienced television personality who has had his own cooking series on the Nashville Network called "Cookin' USA" as well as a nationally syndicated newspaper column entitled "The Butcher."
Neva is a working mom who has perfected the art of putting great meals together in a remarkably short amount of time. Part of her success comes from her rich cultural heritage. Neva is from Hawaii and she's part Chinese, Hawaiian, Russian, French and Portuguese.
Merle and Neva are host of the Public Television series "Cut Up and Cook" which is currently being broadcast by PBS station nationwide.
I had my beginning over fifty years ago when I began working in the meat market with my father. Back in those days, you didn't need to know much about meat to eat well without going broke. A good butcher was a cook's best friend. He was there to help you pick out the best cut for a recipe and, if that was too expensive, he would help you pick a cheaper one that would work almost as well. Those days are gone forever, I'm afraid. Today most every meat market is self-service. It's left up to you to know which is the best cut for the recipe you want to cook. It can be a bit confusing because there are nearly a thousand different terms used in the meat cases around the country to label the component parts of one beef carcass alone. In this book, we try to cut through some of the confusion to help you eat better for less. You'll "get to know Chuck," learn your way "around the round," learn how to cut up a chicken, bone a leg of lamb and filet a fish. Just cutting up your own chicken can save you a fortune in no time if you eat as much chicken as we do. And, if you take advantage of the "specials" on whole chickens you'll find from time to time, you can save even more. So, if you learn to "cut up" a little before you cook, you can save some serious money and still eat well.
