The first process, Bennett tells us, for making bread on the large scale, as for con sumption in London, consists in producing the ferment, which is usually done from eleven to twelve o'clock in the day. It takes about ten minutes to do it.

At a time when the public mind has become most attentive to all subjects having reference to domestic sanitation, I have thought it would be opportune to publish a short work on the labours of the late Dr. Dauglish, and on his system of bread manufacture.
Dr. Dauglish, and on his system of bread manufacture. What claim I have to speak upon this subject rests on the following facts: -
In 1862, while conducting The Social Science Review, I wrote an article in that paper on modern bread making.
