Milk and milk products is an important element in a healthy and balanced diet for all age categories of the population. Value added milk products processing double the margins in the liquid milk segment. Better returns for the dairy farmers will further encourage dairy farming and also consumers will get better quality products for their money. Therefore, this work has been planned on standardization of different value-added milk products processing with the standardized product recipe, procedure, flow chart and economics work out which are most suitable for small scale production and entrepreneurship development.

Dr. S. Kasthuri is working as Assistant Professor at Rajiv Gandhi Institute of Veterinary Education and Research in the Department of Livestock Products Technology for the past 9 years and involved in teaching, research and extension activities related to value added milk and meat products processing.
