Electronic nose (e-nose) technology, inspired by the human olfactory mechanism, have garnered significant attention across diverse fields, including applications in food quality assessment, disease diagnosis, environmental factor monitoring, and security. The technology integrates sensor arrays with advanced algorithms to accurately detect and classify complex volatile organic compounds (VOCs). Despite substantial progress, challenges such as sensor drift, limited sensitivity, poor selectivity, and non-standardized data handling continue to hinder broader application and development. This book offers an in-depth examination of e-nose systems, focusing on sampling techniques like static and dynamic headspace, solid-phase microextraction, and sorptive extraction methods. It also explores sensor technologies including metal oxide semiconductors, conductive polymers, and acoustic wave sensors, alongside classical and intelligent data processing approaches.
