Iain R. Spink is a fifth-generation fish smoker who makes Arbroath Smokies in the traditional way and works tirelessly to elevate the humble dish from a local specialty to a nationwide delicacy. His dedication, passion, and enthusiasm for the product have led to many prestigious awards, including the 2006 BBC Food Producer of the Year, the 2007 Waitrose Best Fresh Produce Award, and the 2012 Great Taste 3-Star Gold Award. He has been featured in numerous newspaper, magazine, and book articles as well as TV appearances. Bob Dewar is an illustrator whose work has appeared in Holyrood magazine, the Scotch Malt Whisky newsletter, and the Scottish Field. He contributed political and social commentary to the Scotsman for 15 years and has had art exhibitions in Edinburgh and Italy. He is the illustrator of The Crack, The Italian Sausage Bible, The Macsween Haggis Bible, and Midges.
