First Edition. Octavo, 9 x 6.25", brown cloth, with original dust jacket, xiv, [2], 426 pp, illustrations from drawings to accompany each chapter heading. First edition, first printing of this important cookbook of African American recipes, written by the cooking columnist for Ebony Magazine, and reprinted in 1962 as "The Ebony Cookbook." In her preface, De Knight writes that "There has long been a need for a non-regional cook book that would contain recipes, menus and cooking hints from and by Negroes all over America. I have attempted in these pages to present, along with my own contributions, as complete a collection as can be found anywhere in the land." The next chapters contain cooking hints, including glossaries of cooking terms, herbs and spices. This is followed by a lengthy chapter containing "some recipes of just a few of the many fine Negro cooks, chefs, caterers, candy-makers, bakers and housewives all over the country," accompanied by biographies of these contributors, including The Harris' Of Virginia, Waters' Catering Company, and Marianne Abramson Perez. Included is a series of New Orleans recipes (including many for gumbo and jambalaya) contributed by Louisiana women, a group of peanut recipes by George Washington Carver and Dr. Austin Curtis, a series of recipes making up a "South Carolina Breakfast" menu, and recipes for Papa Scott's Peanut Butter Muffins, Brown Babies, and more. The rest of the book contains numerous additional recipes, many of also contain the story of the African American family, celebrity, or restauranteur who contributed them. These include Burgoo (a stew served in Kentucky, "especially at racing time at Louisville"), Jeters' Hot Pot (a Christmas-time alcoholic cocktail from the Jeter family of Caroline County, Virginia), Ebony's Barbecued Spare Ribs, East Indian Chicken, Jimmy Daniels' Kedgeree (by an African American restauranteur in New York), Duke Ellington's Scrambled Eggs, and much more. A very good copy of this title usually found in less than desirable condition. Sunning to spine, chipping to jacket corners and spine ends, few closed tears to jacket, soiling to rear panel of jacket.
