This book, an exhaustive study of egg handling and labor output of selected cooperatives, analyzes comparative costs and efficiency of egg handling in Northeastern, North Central, and Western areas of the United States. The author examines 14 operations â" from collecting and processing…to packing and delivering â" performed by 23 cooperatives during a two-week period in 1957-58. The analysis reveals wide variations in direct costs per unit and output per man-hour for most of these operations, although no single association had the lowest or highest costs or outputs in all operations. The study also compares labor costs, material costs, truck costs, and other indirect costs among associations and areas, finding that labor costs constitute the largest portion of total costs. The author notes that increasing labor output per man-hour was associated with increasing volume handled for seven of the nine operations studied, with the exception of coopering and loading out. The book concludes that the findings point to the potential for reducing costs in egg handling operations, and that the unit costs presented can be used by egg handlers to compare with their own costs and identify areas for improvement.
