Specifically, it is an attempt to explain the educational thought of Claude Fleury, a literate, responsible homme de leUres who analyzed the historical origins of public education as it existed in seventeenth-cen tury France and, on that basis, proposed what he considered to be a more generally useful program of studies. Generous space has been devoted to historical, social, and pedagogical background in an effort to place Fleury's thought in its proper cultural context; namely, that of the decline of the Classical Age and the dawn of the Age of Reason. This background material represents also an attempt to explain, at times in detail, the origin of Fleury's Traite du Choix et de la Methode des Etudes and his rise to scholarly and pedagogical prominence at court. It is possible that Fleury's thought, while of most immediate interest to students of seventeenth-century cultural history, will be of interest also to a more general audience. In particular, those charged with providing education that must respond to the ever increasing practical needs of society and at the same time give to contemporary man a of his cultural heritage may find in Fleury's thought some useful sense historical perspective. I hope to do the same for counterfactual conditionals. I write A 0-C for the counter factual conditional with antecedent A and consequent C. It may be read as 'H it were the case that A, then it would be the case that C' or some more idiomatic paraphrase thereof.

Naturgemäß mußte 15 ich von hier aus weiter fortschreiten zu den fundamentaleren Fragen nach dem Wesen der Erkenntnisform im Unterschiede von der Erkenntnismaterie und nach dem Sinn des Unter schiedes zwischen formalen (reinen) und materialen Bestimmun gen, Wahrheiten, Gesetzen. 20 Aber noch in einer ganz anderen Richtung fand ich mich in Probleme der allgemeinen Logik und Erkenntnistheorie ver wickelt. Ich war von der herrschenden Überzeugung ausgegangen, daß es die Psychologie sei, von der, wie die Logik überhaupt, so die Logik der deduktiven Wissenschaften ihre philosophische 25 Aufklärung erhoffen müsse. In the course of those years the subject matter of teaching has been written down and placed at the student's disposal. The Dutch text has been reconsidered and revised several times. Eventually the question arose whether it would be advisable to transform and translate the text in order to transfer available knowledge and experience to others interested in the relatively new branch of food science that food process engineering is. This question has been answered in the affirmative. Up to now only a few books deal with food process engineering; some are rather superficial and evidently meant as introductory, other ones have in our opinion too much emphasis on chemical engineering and too little on food process engineering. We believe - and this will be elucidated at some length in the Introduction - that food process engineering is in many respects a very specific branch of engineering, allied to but certainly different from chemical engineering. We have always endeav oured to show similarities between various branches, stressing at the same time how ever the differences and explaining the why and wherefore of them. The present book illustrates this approach. It considers engineering, process en gineering and food process engineering as ranking in this order of rising importance.

Eventually the question arose whether it would be advisable to transform and translate the text in order to transfer available knowledge and experience to others interested in the relatively new branch of food science that food process engineering is. This question has been answered in the affirmative. Up to now only a few books deal with food process engineering; some are rather superficial and evidently meant as introductory, other ones have in our opinion too much emphasis on chemical engineering and too little on food process engineering.
