Moreover, the massive pK. compilations currently available provide values for only a small fraction of known or possible acids or bases. For example, the compilations listed in Section 1. 3 give pK. data for some 6 000--8 000 acids, whereas if the conservative estimate is made that there are one hundred different substituent groups available to substitute in the benzene ring of benzoic acid, approximately five million tri-substituted benzoic acids are theoretically possible. Thus we have long felt that it is useful to consider methods by which a pK. value might be predicted as an interim value to within several tenths of a pH unit using arguments based on linear free energy relationships, by analogy, by extrapolation, by interpolation from existing data, or in some other way. This degree of precision may be adequate for many purposes such as the recording of spectra of pure species (as anion, neutral molecule or cation), for selection of conditions favourable to solvent extraction, and for the interpretation of pH-profiles for organic reactions.

Meat from different species constitutes a major source of protein for most people. Although raw meat has little flavour and only a blood-like taste, it is a rich reservoir of non-volatile compounds with taste-tactile properties as well as flavour enhancers and aroma precursors. Non-vola tile water-soluble precursors and lipids influence the flavour of meat from different species. In addition, mode of heat processing and the nature of additives used may have a profound effect on the flavour of prepared meats. This book reports the latest advancements in meat flavour research. Following a brief overview, chapters 2 to 5 discuss flavours from different species of meat, namely beef, pork, poultry and mutton. In chapters 6 to 12 the role of meat constituents and processing on flavour are described. The final section of the book (chapters 13 to 15) summarizes analytical methodologies for assessing the flavour quality of meats. Although the flood of important research in this area in the past decade has resulted in many symposia, edited collections of paper…s, reviews, contributions to scientific journals, and patents, apparently no organized presentation in book form has been forthcoming. In a closely connected way, another strong impetus for writing this monograph arose out of our research programs in the Materials Research Center at Lehigh University. As part of this effort, we had naturally compiled hundreds of references and become acquainted with many leaders in the field of blend and composite research. Perhaps the most important concept stressed over and over again is that engineering materials are useful because of their complexity, not in spite of it. The first part of the book gives a detailed account of fundamental operations such as the four arithmetical operations applicable to hyperfunctions, namely differentiation, integration, and convolution, as well as Fourier transform. Fourier series are seen to be nothing but periodic hyperfunctions. In the second part, based on the general theory, the Hilbert transform and Poisson-Schwarz integral formula are treated and their application to integral equations is studied. A great number of formulas obtained in the course of treatment are summarized as tables in the appendix. In particular, those concerning convolution, the Hilbert transform and Fourier transform contain much new material. For example, the compilations listed in Section 1. 3 give pK. data for some 6 000--8 000 acids, whereas if the conservative estimate is made that there are one hundred different substituent groups available to substitute in the benzene ring of benzoic acid, approximately five million tri-substituted benzoic acids are theoretically possible. Thus we have long felt that it is useful to consider methods by which a pK. value might be predicted as an interim value to within several tenths of a pH unit using arguments based on linear free energy relationships, by analogy, by extrapolation, by interpolation from existing data, or in some other way.
