This collection of Norwegian recipes collected by the Nidaros Ladies' Aid is a treasure trove of historical recipes. From the Preface: "Then again, it is widely acknowledged that Norwegians are famous for their interest and care in preparations of good things to eat, and the result, a product of rare excellence and individual character." The Table of Contents simply lists Breads, Soups, Meats, Fish etc., Sauces for Meat and Fish, Salads, Porridges, Puddings, Desserts, etc., and, Cakes. However, Breads begins with no less than five versions of Julekake (Christmas Bread) this is followed by Grandmothers Rye Bread, Flatbrod, two Lefse, and multiple versions of many of the following: Potetkaker, Kraata Kaka, Kringle, Kavringer, Pandekaker, Vafler (waffle), Butterdeig and more. A small sampling of the other sections follow: Soup - Saftsuppe No. 2, Meats - Faar I Kall (lamb in cabbage), Sildekaker (Herring cakes); Sauces - Cold Horseradish Sauce; Puddings - Riskake (rice cake, like not like those in grocery store!); Cakes Fattigmand (fried cookie), and one of the most delicious sounding Coffee Cake recipes I've read. A wonderful bit of history. Nidaros Township, (presumably named after the Nidaros Cathedral in Norway,) first made its appearance in 1871 with fifteen names of Scandinavian origins on the petition for township, which was granted.
