En 1821, il est chargé par l'administration française de définir une méthode pratique de mesure exacte de la concentration en alcool des boissons. Gay-Lussac met au point un densimètre gradué sur la concentration volumétrique en alcool. Cela donne le degré Gay-Lussac qui correspond au pourcentage d'alcool dans le vin par exemple. La loi de 1824 sur la taxation des boissons alcooliques utilise ses travaux. Avec Collardeau, ancien élève de l'École Polytechnique, il devient fabricant d'instruments scientifiques et commercialise son alcoomètre en 1830. Gay-Lussac is developing a hydrometer graduated on the volumetric alcohol concentration. This gives the Gay-Lussac degree which corresponds to the percentage of alcohol in the wine for example. The law of 1824 on the taxation of alcoholic beverages uses his work. With Collardeau, a former student of the École Polytechnique, he became a manufacturer of scientific instruments and marketed his alcoholometer in 1830.
