Produced by the African American employees of the Universal Life Insurance Company in Memphis and gathered from employees over 10 states and Washington, D.C. In her preface, Hassell writes "The tradition of Southern cooking has been handed down through many generations. it is our hope that these Reflections will provide a basic formula by which you may introduce âSoul Food' into the culture of your newer generation." Universal Life Insurance Company was founded on Beale Street in Memphis in 1923 by African-American businessman Dr. Joseph E. Walker with the goal of "improving the economic condition of people of color." An uncommon and nicely-produced cookbook. (N.B. The dating on the title page is a bit unclear: "Registered 1984 by Ulico Press, copyright 1994 by Hassell House, Creative Fine Arts." *OCLC* locates 16 copies and gives a 1984 date for them all.).
