Carol Byrd-Bredbenner is a professor and nutrition extension specialist at Cook College, Rutgers University. She chairs the family and consumer science department, is on the board of the Journal of Nutrition Education, and has published two books on nutrition. The author's royalties from this book will be donated to the Rutgers Cooperative Extension.
