While granting M. Maurois' competence in the matter, we respectfully propose a third desideratum for eating well: a properly planned menu. However ingeniously devised and expertly prepared a dish is, its reception must be dependent on the meal of which it is a part. An entrée, for example, achieves its fullest measure of appreciation only when it is complemented by the dishes that precede it, by those that accompany it, and by those that follow. The modern written menu probably had its origin during the reign of Henry VIII, at a banquet given by the Duke of Brunswick in 1541. One of the Duke's guests noticed His Grace consulting a piece of paper from time to time, and finally made bold to ask him its purpose. The Duke explained that it was a list of the dishes to be served, from which he could determine those that pleased him most and reserve his appetite for them. The idea gained wide popularity, and before long there was hardly a banquet at which menus, highly decorated and grown huge of size, were not in evidence.
