Artificial intelligence (AI) is a branch of computer science which uses data to create models. These models learn from data and are used to make predictions. AI tools are being developed to deal with the complexity and variety of data in the food industry. New advanced sensing technologies, including electronic noses and tongues, are discussed in detail emphasizing their role in ensuring food product quality and safety.
