Post-contamination with gram-negative psychrotrophic bacteria is the main cause of limited shelf-life of pasteurized yoghurts. In yoghurt, yeast and mold contamination is most reason for product decay that should be avoided. Probiotic and LAB can bind dietary carcinogens and mutagens. LAB strains from various source can be applied as starter cultures to decrease or delete the AFM1. Those strains have anti-carcinogenic and anti-mutagenic effects. Probiotics are ‘live microorganisms which when managed in enough amounts confer a health benefit on the host. Thus, recommended to include dairy products remarkably probiotics including food products in their daily routine as a dietary supplement.
