Pierre Lameloise, cuisinier riche d expériences (Ledoyen, Lapérouse et le Savoyà Londres) reprend, en 1921, avec son épouse, l Hôtel du Commerceà Chagny. Il obtient une première étoile Michelin en 1925, puis une deuxième en 1931. Son fils, qui lui succède dans les années 60, baptise l Hôtel du Commerce « Lameloise». À partir de 1971, c'est Jacques Lameloise, passé par les plus grandes maisons, qui impose son empreinte et sa sensibilité culinaire, et obtient la consécration en 1979 avec une troisième étoile. Depuis 2009, un tandem formé d Éric Pras, Meilleur Ouvrier de France, en cuisine et Frédéric Lamy en salle, donne un nouveau souffle à la maison. Respectant les valeurs fondamentales de la maison Lameloise, ils l inscrivent dans son époque et en font un lieu de séjour rêvé, une maison de famille, en tellement mieux. Après une entrée en matière photographique autour des hommes et des lieux de la Bourgogne, le livre propose un parcours au c ur de produits et producteurs d exception. de poivre, de cassis ou d escargots gros gris, de b uf de Charolles ou d Aisy cendré, un remarquable et confidentiel fromage local.
