L'opinion avait en effet bien raison d'avoir peur de son alimentation, mais elle se trompait complètement de cible. Ce ne sont pas les intoxications ou les infections alimentaires qui représentent un danger de santé publique. Tout d'abor parce que les producteurs dans leur ensemble désirent fournir les produits les meilleurs et les plus sains. Ils dépensent beaucoup d'énergie, et de savoir pour cela.
