Due fascette di rinforzo fra i piatti e le sguardie, come da fotografia, ma legatura ben salda e fascicoli ben legati. Giulia Turco Turcati nacque…a Trento il primo aprile del 1848 dal barone Simone Turco Turcati (1803-1861) e dalla contessa Virginia Alberti Poja. La famiglia risiedeva a Trento ma possedeva nel centro di Sopramonte una grande villa che ne divenne la residenza soprattutto durante la bella stagione. La baronessa Giulia venne educata all'amore per l'arte, la letteratura e la musica ed imparò a suonare il pianoforte. Dopo il matrimonio nel 1877 con il violinista e compositore Raffello Lazzari (1845-1924), compositore, direttore d'orchestra e ottimo pittore, Giulia iniziò una lunga e intensa attività di scrittrice e animatrice di cultura che spaziava dalla botanica alla pittura e alla critica d'arte, dalla novellistica al romanzo, dalla ricerca culinaria alla musica ottenendo riconoscimenti in campo locale e nazionale. Collaborò con diverse riviste, anche di rilevanza nazionale, pubblicando novelle, romanzi a puntate, recensione di libri, impressioni e ricordi di viaggi, perlopiù firmati con lo pseudonimo maschile ?Jacopo Turco? Tra le sue numerose pubblicazioni, ricordiamo quelle a carattere gastronomico: Manuale pratico di cucina, pasticceria e credenza per l'uso di famiglia (1904); Il piccolo focolare (1908). In den WarenkorbGiulia Turco (1848-1912), baronessa trentina, sposata con il musicista veneziano Raffaello Lazzari, proviene, oltre che dal medesimo territorio, dallo stesso ambiente culturale e religioso della Anzoletti e della Giacomelli. Ma diversamente da loro sviluppa anche un interesse naturalistico che la porta a lavorare con il micologo… Giacomo Bresadola. La collaborazione alla "Rivista delle signorine" coincide con nuovi interessi educativi e letterari che sfoceranno, alla lunga, in racconti e romanzi, pubblicati con lo pseudonimo di Jacopo Turco. Qui, sulla rivista, scrive per signorine che l'estate possono recarsi in campagna o al mare, o intraprendere un piacevole viaggio, alle quali suggerisce buoni comportamenti, atti di caritÃ, la coltivazione dei fiori, la raccolta di piante medicinali e, in particolare, la stesura di un loro personale libro di cucina. A tal fine la sua "pagina" termina sempre con "qualche facile ricetta". Cosà la nobildonna Turco (che vive fra Trento e Venezia) ai suoi pià consolidati interessi culturali (à una scrittrice sulle orme di Fogazzaro) aggiunge, in questi ultimi anni del secolo, anche quello di gastronoma. Un impegno che prende molto seriamente come testimoniano i ricettari manoscritti (che danno conto di una vasta ricerca bibliografica e "sul campo") e un interessante carteggio tenuto tra il 1899 e il 1901 con Pellegrino Artusi. Nel 1904 pubblica la presente opera (qui offerta nella seconda edizione del 1910), il suo lavoro pià importante e molto ricercato, con 3.000 ricette e 150 disegni intercalati nel testo. Anonimo (ma immediatamente riconosciuto come suo), rimanda semplicemente all'esperienza di "una donna italiana" che lo dedica, memore della "Rivista per le signorine", alle "fanciulle e alle giovani spose". Sul frontespizio, una sintetica epigrafe riprende la filosofia della "domesticitÃ": "La vera poesia della vita femminile à lo studio di gradire anche nel modo pià umile i propri cari". Nello specifico, nonostante lo scambio epistolare con l'Artusi, la cucina della Turco à ben lontana da quella scienza e da quell'arte moderna e leggera che non ammettevano pià travestimenti. Viceversa la Turco rimane fedele ad un modello di cucina ancora ottocentesca, grassa e greve di spezie, con preparazioni complicate e lunghissime, con pietanze poco, o troppo saporite. L'accoglienza da parte della stampa à perà positiva. In Trentino il libro à letto politicamente, inserito nella "questione nazionale": il quotidiano liberale "L'Alto Adige" rileva come il Manuale sia "un'opera buona e patriottica", perchà "squisitamente italiana". "Il nostro libro à tutto un profumo di patria trentina e italiana, à un fiore delle nostre Alpi educato dall'esperta mano della donna tridentina". Ma la recensione pià importante e impegnativa appare sul "Popolo", il quotidiano socialista fondato e diretto da Cesare Battisti. La scrive Enrica Sant'Ambrogio Piscel (intellettuale e giornalista veronese, curiosa e versatile, moglie di Antonio Piscel, avvocato leader con Battisti del partito socialista trentino) cui dà un titolo programmatico: "Un bel libro che c'à e un buon libro che manca".
