Findings suggest that using inlet temperatures of at least 1200°F and exit temperatures of 530°F can effectively dry tartary buckwheat. Drying should be conducted until the leaves are completely brittle but the stems remain moist and tough, allowing for effective stem removal during screening. Weather permitting, wilting the buckwheat after harvesting can remove approximately one-third of its water content, greatly increasing drier capacity and decreasing fuel costs. If weather conditions are unfavorable for wilting, the buckwheat can be directly sent to the drier without significant rutin loss. The author estimates the total cost of producing a ton of leaf meal, including equipment and buckwheat acquisition, to range between $160 to $200. With a suitable buckwheat variety and correct drying and screening techniques, the resulting meal's rutin content can reach between 4 and 6%, making it valuable for commercial use.
