The objectives of this study are as follows: To select various samples of apple-based compotes available on the Tunisian market from different brands of Tunisian and foreign origin. The samples were processed using liquid-liquid and solid-liquid extraction on a C18 column, and extraction yields were determined. The various extracts obtained were analyzed using high-performance liquid chromatography equipped with a UV detector. A calibration curve was established to express the relationship between the instrument's response-expressed as peak areas-and the concentration of patulin, enabling the determination of patulin concentrations in the various extracts. 60 pp. Englisch.
